Quick take: really good deal for solid food
Best item: bún bò Huế
Thuyền Viên is a tiny hole in the wall spot in Anaheim so small you might miss it if you didn’t know what to look for. I forgot to take picture of the front of the store, but a sign that reads veggie pho will point you the right way. That being said, we didn’t get the pho, we had bún bò Huế ($10.95).
Bún bò Huế is the lesser known of the Vietnamese noodle soups, but really deserves some time in the spotlight. There are a few differences between bún bò Huế and the more popular pho, but the main difference is the lemongrass in bún bò Huế. I apologize for the photo, for various reasons we had to take the food to go and plate it at home.

First off, honestly for the price this is a great deal. The broth is flavorful, and they give a good amount of the fresh veggie and herbs. For protein there is some mock meat, tofu and mushrooms. When you order they let you customize the spiciness levels.
Ratings:
Hipster 1: 8.55/10 – pretty good, it could be better if there were more accoutrements, but unbeatable price. They give a lot of thinly sliced veggies is appreciated.
Hipster 2: 9/10 – never had bún bò Huế as a non-vegan, so nothing to compare to, but it tastes good and is satisfying
